It is the oil obtained from the olives collected on the property during the beginning of the harvest (November), while the olive is in plain veraison, before reaching maturity and collected directly from the tree. It offers softer organoleptic properties than the early one, with a characteristic bitterness and spiciness, and always in the Extra Virgin Oil category.

From the hundred years old olive trees of our El Derramadero farmhouse, we harvest the olives, of the Picual variety, at the optimum maturation point, during veraison, in November.
